Let’s Talk Malawian Recipes Again - Zigege Recipe

Zigege is a popular and affordable street food found in markets and roadside stalls across Malawi. It is a nice  snack that can also be enjoyed as a light meal – crispy, golden, and packed with flavor.

Ready to make some? Let’s dive into the recipe!

Zigege Ingredients

  • Irish potatoes

  • Wheat flour

  • Food coloring (commonly Yellow)

  • Salt (to taste)

  • Water

  • Cooking oil (for frying)

  • Optional: Chopped onions for extra flavor

Instructions

Step 1:
First, peel and slice the Irish potatoes into thin, oval-shaped pieces. Avoid slicing them too thick to ensure they cook evenly and become crispy when fried.

Step 2:
Boil the potato slices in lightly salted water. This softens them just enough without fully cooking them.

Step 3:
In a mixing bowl, prepare a thin batter using wheat flour, water, a pinch of salt, and a small amount of food coloring. For extra flavor, you can mix in finely chopped onions.

Step 4:
Dip each boiled potato slice into the batter, ensuring it’s evenly coated. Then deep fry in hot oil until  crispy.

Then, your zigege is ready to serve. Serve your Zigege hot and crispy. They are perfect on their own, but you can also enjoy them with a fresh salad or a protein of your choice for a more filling meal.
